Brrr…. it’s cold outside! But it’s the perfect weather to continue this very merry Blogmas and to show off my second holiday look for this season as well as share one of my favorite winter breakfast treats that you will crave!
I love this simple and casual holiday look. Sometimes just by putting on a jacket you can really transform an outfit. This blush suede one from FOI Clothing Boutique was definitely the perfect choice for today’s chilly weather. It’s so soft and definitely does its job of keeping you warm, plus its super CUTE too! I kept it casual with a pair of dark skinny jeans and my over the knee black boots from bebe. I love the color combo of this look! Pairing this beautiful blush pink with this pale icy blue is just breathtaking in my opinion. This pastel duo is unique and effortlessly sweet for this holiday season!

Delicious & Healthy Cranberry & Orange Mini Muffins
These cute mini muffins are one of my favorite winter breakfast treats! They are perfect for the holidays! My family and I love to make them this time of the year and we always have to make a batch to bring up to my Aunt’s house for Christmas morning… my baby cousins LOVE them!! They are full of bright citrus flavors! And when you top it off with the orange glaze, it’s a holiday party in your mouth, it just POPs with flavor!! Leftovers will keep for at least a week if stored in an airtight container.
INGREDIENTS
2 cups (240g) white whole wheat flour or gluten-free* flour (measured like this)
1 ½ tsp baking powder
½ tsp baking soda
¼ tsp salt
2 tbsp (14g) orange zest (about 2 large)
1 tbsp (14g) unsalted butter or coconut oil, melted and cooled slightly
2 large egg whites, room temperature
2 tsp vanilla extract
1 ½ tsp vanilla crème stevia
½ cup (120g) plain nonfat Greek yogurt
¼ cup (60mL) freshly squeezed orange juice (about 1 large)
½ cup (120mL) nonfat milk
1 cup (110g) fresh cranberries, finely diced
Orange Glaze
1 cup powdered sugar, 2 Tbsp orange juice…Blend until smooth.
INSTRUCTIONS
STEP #1: Preheat the oven to 350°F, and lightly coat 32 mini muffin cups with nonstick cooking spray.
STEP #2: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and orange zest. In a separate bowl, whisk together the butter or coconut oil, egg whites, vanilla extract, and vanilla crème stevia. Stir in the Greek yogurt, mixing until no large lumps remain. Stir in the orange juice. Alternate between adding the flour mixture and milk, beginning and ending with the flour mixture, and stirring just until incorporated. (For best results, add the flour mixture in 3 equal parts.) Gently fold in the cranberries.
STEP #3:Divide the batter between the prepared muffin cups. Bake at 350°F for 12-15 minutes or until the tops are firm to the touch. Cool in the muffin cups for 5 minutes before carefully transferring to a wire rack.
STEP #4: Drizzle the orange glaze over the cooled mini muffins and then serve!
